POSITION: Chef Manager

REPORTS TO: Vice President of Island Operations

START DATE: May 1, 2023

DURATION: 7 Months, Full Time, Exempt

LOCATION: Thompson Island


POSITION SUMMARY

The Chef Manager is responsible for the on-site management of the Thompson Island food service operation. This position works alongside, while at the same time providing direct supervision to positions charged with the set-up and service of food to Event and Conference clients: These clients whose participation directly supports youth programming on Thompson Island, represent a vital resource to the Organization and its mission. The Chef Manager will work closely with the Vice President of Island Operations in all aspects of the operation.


ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Direction of the Kitchen Staff including hiring, scheduling, and managing.
  • Oversee the quality of food preparation, including purchasing, preparation, and serving.
  • Ensure proper amounts and menus are ordered for all Events & Conferences.
  • Maintain quality, consistent food inventory for Events and Conferences.
  • Works with Human Resources to ensure appropriate coverage of short-term staff needs.
  • Maintains proper food inventories and preparation levels.
  • Keeps the kitchen in clean and organized manner.
  • Reviews weekly schedules and plans food & staffing coverage. Prepares a bi-weekly rotating

dining room menu.

  • Interacts with the Programs department pertaining to students’ meal requirements.
  • Directs the onboarding of new staff.
  • Oversees training for new Event and Conferences food service staff.
  • Shares oversight of Stewart positions with the Sous Chef
  • Completes Bi-Weekly payroll

ACCOUNTABILITIES

Reports to the Vice President of Island Operations
Direct supervision of Food Service staff at Event and Conference sites

Shared supervision of Dining Hall Services with the Sous Chef

Supports oversight of Line Staff and Steward


QUALIFICATIONS

Current Serve Safe Certification.

Cooking Degree or equivalent experience in a related field.

Experience managing groups in fast-paced, dynamic environments.

Proven skill in quality, and safe preparation of a variety of meal options.

Exemplary customer service and ability to engage those clients directly contributing to Mission.


WORK CONDITIONS

  • 25-minute boat ride to and from Thompson Island is part of the daily commute.
  • Non-traditional hours can include early mornings, late nights, and weekend work.
  • Overnights on Thompson Island are sometimes required.

PHYSICAL REQUIREMENTS

  • All positions reporting hours to the island, are asked to assist loading/unloading cargo from the boat as able. This involves lifting and walking with parcels upwards of 50lbs on and off moving docks and up/down ramps/gangways.
  • Must be able to remain on feet and/or stay active for 8+ hours per day.
  • Ability to remain focused and productive in a fast-paced environment and in varying, sometimes challenging weather conditions and heat
