SUMMARY OF POSITION:

The Cook is responsible for preparing food in accordance with current applicable Federal, State and local standards, guidelines and regulations; the Facility’s standards and procedure; and as directed by the Dietary Manager to ensure quality food service is provided at all times.

Preparation/Production Responsibilities

Reads, understands, and follows recipe directions, diet orders and work assignments.

Withstands exposure to temperature and humidity changes as a result of entering refrigerated storage areas, working at ovens, ranges, dish washing machines and steam tables.

Prepares food in accordance with sanitary regulations, as well as the facility’s standards and procedures.

Prepares meals in accordance with planned menus, standardized recipes and production.

Makes authorized substitutions to menus, snacks, or nourishment while completing the appropriate documentation.

Serves meals that are palatable, appetizing in appearance, garnished and at proper temperature, on a timely basis.

Serves food in accordance with established portion control procedures, adhering to extended menus, recipes and specific therapeutic diets according to the preplanned menu.

Reviews menus prior to production of food and reviews menu extensions with serving staff.

Honors residents/patients food likes and dislikes per diet card.

Ensures that food supplies for the next day’s production are available. Completes preparations as required.

Assists in maintaining all work and storage areas in a clean and properly arranged manner at all times. Moves stock and equipment as needed.

Performs administrative requirements such as completing necessary forms and reports, and submits them to the Dietary Manager.

Food Safety

Applies safe food handling techniques as identified in the procedures manual and state and federal codes and regulations.

Uses proper hand washing techniques.

Thaws food appropriately.

Stores food using correct packaging and labeling.

Uses gloves appropriately and changes when required.

Checks refrigerators and freezers for correct temperatures.

Cools, stores and reheats cooked foods according to procedures.
