East End Grill – a new steakhouse & innovative bistro at 10th & Main in downtown Lafayette. Qualification Summary:
- High School diploma is preferred, and/or equivalent work experience
- Certification in sanitation, ServSafe or equivalent is preferred.
- Previous experience in similar restaurant or hotel culinary department preferred.
- Culinary degree from accredited school a plus.
Physical Requirements:
- Long hours may be required.
- Medium work-exerting up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, pull or otherwise move objects.
- Ability to stand during entire shift.
- Must be able to withstand extreme variance to hot and cold temperatures.
Duties and Functions:
- Approach all encounters with guest and employees in an attentive, friendly, courteous and service oriented manner.
- Maintain regular attendance in compliance with kbistro standards, as required by scheduling, which will vary according to the needs of the restaurant.
- Maintain high standards of personal appearance and grooming and hygiene, which includes a clean and pressed uniform.
- Comply at all times with East End Grill standards and regulations to encourage safe and efficient restaurant operations.
- Maintain a warm and friendly demeanor at all times.
- Have a thorough knowledge of menus and the preparation required according to East End Grill standards.
- Prepare food of consistent quality following recipe cards.
- Complete necessary food and station preparation prior to opening of the restaurant in order to ensure that guest are served promptly and efficiently during the restaurant operating hours.
- Proficiency in the following cooking techniques: Deep Fat Frying, pan frying, Sautéing, grilling, Broiling, roasting, baking, boiling, steaming, poaching, braising, and smoking, as well as cold food production and plating techniques.
- Recognize quality standards in fresh produce, fish, dairy and meat products.
- Knowledge of herbs, spices and flavor profiles.
- Maintain a clean and sanitary environment with knowledge of proper handling, storage and sanitation.
- Breakdown kitchen line, storing food and equipment properly at the end of each shift.
- Know the location and operation of all fire extinguishing equipment and be familiar with East End emergency procedures.
- Practice safe work habits at all times to avoid possible injury to self or other team members.
- Be familiar with all policies and SOP’s (Standard Operating Procedures) set forth by East End.
- Use production charts as specified by East End standards.
- Be able to support any station in the kitchen that requires help.
- Date all food containers and rotate as per East End SOP.
- Cook orders as needed and handle any special requests of guest in positive manner.
- Start food items that are prepared ahead of time, making sure not to prepare over estimated needs.
- Properly portion all items on your assigned station.
- Control food waste, loss and usage per SOP. Assist in setting up plans and actions to correct any food cost problems.
- Check pars for shift use and determine necessary preparation, freezer pulls and line set up. Note any out of stock items or possible shortages.
- Return all food items not used on next shift to designated storage areas, being sure to cover/date all perishables.
- Perform other duties as required by management and owners.
- Attend all training/meetings as required by management and owners.
