Director of Kitchen Operations

RiverWoods Exeter is currently hiring for a Director of Kitchen Operations to come join our team in Exeter, NH. We are seeking a True Executive Chef and leader who is passionate about redefining the aging experience through the culinary lens

In this leadership role, the Director will work under the Director of Culinary Operations to oversee and direct the kitchen operations at Riverwoods Exeter for independent living, assisted living and skilled nursing residents, employees and guests; manage operations within the approved operating budget and ensure efficient, sanitary and safe food preparation and handling as well as ensuring all local, state and federal regulatory requirements and guidelines are met.

Responsibilities:
  • Responsible for customer service and hospitality management for culinary services for three communities within the Exeter Campus which includes, 3 main kitchens and 3 bistros, as well as a partnership with catering services
  • Lead the process for hiring, orienting and training new employees
  • Implement and maintain recognition and reward process to foster high employee satisfaction and retention
  • Support menu planning and design with the active involvement of residents and culinary team members to ensure variety, optimal use of fresh and locally produced ingredients with the highest possible nutrient content.
  • Ensure the consistent and complete use of standardized recipes (scaled to a forecasted amount) for all product preparation.
  • Implement and maintain a menu management operating system including Point-of-Sale to manage resident meal plan offerings, accurate billing and forecasting
  • Participate in and support care planning for healthcare residents.
  • Be an active, engaged and supportive of the resident dining committee in independent living and health care.
  • Be present and engaged with residents and staff during meal times, especially during dinner meal times to assure highest food quality and service execution
  • Ensures compliance with all federal, state, and local standards and regulatory requirements by working with culinary team members, staff and the Director of Culinary Operations
  • Creatively solves problems and conflicts to improve resident and staff life
Qualifications:
  • A minimum of 7 - 10 years successful experience in senior services and/or health care dining management, 10+ Preferred
  • Experience leading a large dining service team
  • Experience monitoring and controlling operating costs within the approved operating budget
  • An effective communicator with a high level of personal energy and leadership skills who can strike a balance between service demand, creativity and financial sustainability
  • The ability to take work seriously but not self. A sense of humor is a must
  • Prior experience working in Continuing Care Retirement Communities or health-care a plus, not necessary
  • Understanding of Senior Care
  • ServSafe Certification
  • Associate Degree in Culinary Arts, Food Service Management or Hospitality Management, BS Preferred
