About the Office:
Gracie Mansion, also known as New York’s “People’s House” has served as the official residence of the Mayor of New York City since 1942 when Fiorello H. La Guardia first lived in the structure. Gracie Mansion’s history dates to 1799, when it was constructed by New York merchant named Archibald Gracie. In addition to serving as the official residence of the mayor and his family, Gracie Mansion is also the site of numerous mayoral events and functions.
About the Role:
Reporting to the Senior Executive Chef, the Executive Chef will manage kitchen activities; prepare menus and assist with the planning and directing of food preparation for all culinary activities at Gracie Mansion.
We prepare healthy, seasonally appropriate vegan low sodium and often oil free meals for the Mayor, and his guests. The culinary team is responsible for daily production and execution of the Mansion’s indoor and outdoor banquet and event operations. The Executive Chef alongside the Senior Executive Chef will lead the culinary team in preparation for all events held on the Gracie Mansion premises. The Executive Chef will also lead in the absence of the Senior Executive Chef.
The ideal candidate will bring a keen eye for details and an ability to provide exemplary customer service while maintaining attentiveness to dietary requests and restrictions. Experience with multiple cuisines and cooking techniques. Special emphasis and passion for plant based cooking strongly preferred.
Duties include but are not limited to:
- Hands on daily cooking with the culinary team
- Collaborate with Senior Executive Chef on cuisine appropriate menus
- Ensure that the kitchen staff work harmoniously to ensure timely production of quality foods
- Ensure all complaints, inquiries, and suggestions by guests and clients are addressed
- Certify all dishes are prepared with high quality to stated specifications and served at the requested portion and appropriate temperature
- Manage, lead and train cooks, dishwashers, and catering staff to ensure consistency and quality of service
- Comply with sanitary regulations by ensuring work areas are maintained and properly cleaned
- Verify that required quality, quantity and safety standards are adhered to in the production and preparation of food
- Assisting with the preparation of kitchen cleaning rosters and the supervision of cleaning schedules
- Successfully work with vendors to ensure effective and efficient communication
- Ensure that meal substitutes and supplemental items are prepared
- Ensure that all standard recipes are maintained and safeguarded on designated Mayor’s Office software
- Timely completion of inventory orders and purchase requisitions to ensure adequate stock; necessary supplies to support effective event and budget management
- Manage food logs and ensure effective stock purchase, receipt and storage of food
Qualifications:
- 5-7 years of experience minimum working in a private residence, large-scale banquet, and/or catering environment
- Excellent working knowledge of many styles of plant-based cuisine and types of events
- Significant experience maintaining kitchen inventory logs
- Strong Computer Skills (Microsoft Office, Outlook)
- Fluency in English, written and spoken
- Bi-lingual ability a plus
- Culinary degree a plus
- Budget management
- Strong interpersonal and problem-solving abilities
- Team player and ability to work successfully in a high-pressured environment.
Salary Range:
$100,000 - $115,000
