FOOD SERVICE SUPERVISOR

MONTANA STATE PRISON

DEER LODGE, MT

This position is responsible for the receiving, preparation, delivery, and serving of (3) meals per day for consumption of 1500 inmates and staff. Supervises and trains a constantly changing inmate work force in large quantity re-thermalization using highly technical equipment. Training includes re-thermalization procedures, large quantity cooking skills, serving & delivery techniques, and cleaning & sanitation procedures. Establishes work plans for inmate work force by using production schedules and menus to ensure the smooth and orderly operation of the kitchen. Supervise the loading and delivery of food and nonfood items to five different areas while adhering to the master menu and pre-established time and procedure guidelines, making certain that the location has all needed food to serve its population.

Train inmate workers to adhere to the Food Service HACCP (Hazard Analysis Critical Control Point) Plan. Enforces the Food Service HACCP Plan, SSOP’s (Sanitation Standard Operating Procedures) and all appropriate health guidelines by keeping required records, completing daily inspections, requesting maintenance work or clean up, fulfilling re-thermalization requirements for food, following sanitation guidelines, and reviewing the HACCP manual for updates. Supervise the preparation of all ingredients for alternative menu production by using the master menu and standardized recipes, weights, and measures to ensure consistent quality of food preparation. Ensure that menu requirements and production schedules are met by utilizing the master menu, standardized recipes, and institutional count to produce all needed products by their shipping times.

Maintain the safety & security of Food Service by enforcing current security policies, coordinating actions w/ security staff & overseeing the orderly operation of the kitchen. Enforce the rules and regulations of the institution among the inmate workers by observing inmate behavior, documenting rule infractions, and communicating with security staff. Maintains awareness of prison environment regarding safety hazards, institutional security, inmate activities, and inmate conflicts and consults, as needed or required, with supervisors to obtain clarification or address concerns. Ensures key control and security regarding tools, knives, cutting equipment and controlled chemicals by keeping locks locked, using the chit system, and properly supervising inmate workers always to maintain the safety and security of staff and inmates.

QUALIFICATIONS - The above knowledge, skills, and abilities are typically acquired through a combination of education and experience equivalent to graduation from High School or a GED. Food service experience preferred. Must have strong supervisory ability is needed to deal with inmates.
